Breakfast was eggs and veggies.
Lunch was two purple containers of the aforementioned fruit platter.
After-lunch snack was two more of those turkey tacos that I'd made yesterday.
And for dinner (because I had so many carbs left) I experimented with fried rice.
Taurus' Attempt at Fried Rice
EVOO: 2 tsp (2 spoons)
Eggs: 2 (1 red)
Frozen peas: 1 green
Frozen chopped onions: 1 green
Brown Rice: 2 yellow containers
Dried basil to taste
Minced garlic in water to taste
Chili pepper flakes to taste
Sesame seeds: 1 orange
This made an obnoxiously large amount of food. I thought I was hungry, but not hungry enough to eat all of this! I foolishly forgot to take a picture when I first made it, so when I make it again I'll come back in here to insert a picture.
One of our many adventures yesterday took us to a small farm about 5 miles from where we live. We got a dozen eggs, and I was so excited--I've never seen eggs like these before. They're super-fresh...BUT THEY'RE MULTI-COLORED.
After getting over the initial desire to immediately cook up some ham, the hubby and I decided that tomorrow morning would be a great time to try these out. Can't wait for breakfast now!
